deseo – meaning desire in Spanish – showcases imaginative Nuevo Latino cuisine, a skillfully blended combination of traditional Latin American ingredients and contemporary culinary style to cultivate bold and intriguing dishes. The richly flavored menu ranges from mouthwatering ceviches, grilled and roasted fish and shellfish, and a selection of skillfully prepared meats all with tantalizing South American-inspired marinades, sauces and sides.

While floor-to-ceiling windows provide stunning views of the golf course and neighboring mountains, the best seats in the house are at The Rail – the counter surrounding the exhibition kitchen – where diners observe and engage with chefs as they expertly prepare the evening’s fare. A communal approach to dining, guests may interact with the chefs to discuss the colorful items being prepared in front of them, or even sample a bite for a behind-the-scenes taste.
